Semolina is made with wheat germ. It's coarsely ground from durum wheat, and will serve you well in making traditional pasta, gnocchi, bread, pizza bases and biscuit dough.
Semolina is most often used to make pasta. The flour is sturdier than white flour, so it is better suited for pasta making. White flour on the other hand is not very resilient when used in pasta.
