1. Bring 1 cup pearl barley and 2 1/2 cups water (or broth) to a boil.
2. Reduce heat, cover and simmer for 40-50 minutes until tender or most of the liquid has been absorbed.
Pearl barley is commonly used in soups and stews to thicken and add extra texture. But its delicate and widely complementary flavour lends it to lots of tasty uses.
